NYC's Edible Garden Has Something For Everyone

Edible Garden exhibit at the New York Botanical Garden was created to showcase some of the summer's tastiest and healthiest foods.
Edible Garden's spokesperson Jennifer Rotham believes the lush plants seen in the exhibit will help teach visitors the importance of incorporating green vegetables into their daily diets.
"They are going to learn how to grow everything they see and how to harvest and use those vegetables at-home in their kitchen," Rotham said.
Rotham also thinks the exhibit is opening at the right time, which is why she expects it to be succesful.
"It's really timely now, with some of the health issues that our society is facing and also the economic issues that we're facing," Rotham said. "Growing vegetables is economically efficient and good for you."
The exhibit includes various sections, one of which is the Martha Stewart Culinary Herb Garden. It includes all of the famous cook's favorite seasonings and spices, like Chervil, Italian parsley and saltworts, although they are not allowed to be eaten unless served on a plate by chef Dan Rotham. This rule was designed to prevent the over-eager from plucking and chomping away at the various plants.
Rotham tends to get creative with his recipes, and even is known to include edible flowers like the Yarrow Blossom in his dishes.
Edible Garden also includes a family garden section that grows traditionally edible plants, as well as a Chinese section known for snow peas and mustard greens and a pizza garden containing vegetable toppings commonly put on the Italian favorite.
